A delicious and nutritious vegan carrot soup

Ingredients 1 carrot, peeled and finely chopped 2 tablespoons soy sauce 2 tablespoons water 1 tablespoon sesame oil 2 tablespoons ginger, minced 2 tablespoons garlic, minced 1 tablespoon coriander, minced salt and pepper to taste Instructions In a medium saucepan over medium-high heat, add the soy sauce and water.

Saute for about 5 minutes, stirring occasionally, until the water is almost evaporated.

Add the ginger, garlic, coriandra, and salt and the pepper to your taste.

Add all the other ingredients to the saucepan.

Bring to a boil, reduce the heat to medium low and simmer for 30 minutes.

Remove from heat and add the carrots.

Return the sauce to the pot and stir until everything is coated in carrot sauce.

Serve warm with your favorite soup or soup sauce.

Notes * The carrots are more flavorful when they are cooked in broth.
