So sweet potatoes are pretty good carbs, you can get a bit of fiber in them.

This sweet potato can easily be made into a salad and then tossed with veggies like corn, peas and carrots.

Start by chopping the sweet potatoes into bite-sized pieces.

Then chop up the veggies, toss them in a bowl with some of the water, salt and pepper, and mix everything up.
You’ll end up with a salad with enough vegetables and protein to last you two meals.
